Recipes For A Diabetic - 1

I will regularly publish articles on mouth watering recipes for a diabetic. I will try and give you , not only western, but from different cultures and ethnic groups around the world.

Today, I will give you the recipe for Baked Apples. In preparing this diabetic recipe, we will be using Splenda No Calorie Sweetener as well as Cinnamon Powder. Cinnamon barks or ground cinnamon are known to be very good for diabetes cure.

BAKED APPLES

Servings: 4

  • 4 Apples
  • 1 tsp butter
  • 2 tablets splenda sweetener, powdered or 2 sachets
  • ¼ tsp grated orange rind
  • ½ tsp cinnamon powder
  • ¼ tsp clove powder
  • 1 Tbsp blanched, peeled and chopped almonds
  • 1 Tbsp black currants
  • ¼ tsp vanilla essence

HEAT oven to 150 degrees Centigrade (300 degree Fahrenheit)

WASH and core apples. Peel skin from about ½ inch off the tops of the apples.

MIX butter, sweetener, orange rind, spice powders, almonds, black currants and vanilla in a small bowl. Divide into 4 portions.

STUFF apples with filling, pressing it down with the back of a teaspoon.

POUR water into a baking dish to a depth of ½ inch. Arrange stuffed apples in water and bake in preheated oven for about 25 minutes till soft.

SERVE hot or cold.

  • Calories: 120
  • Protein: 1 gm
  • Fat: 4 gm
  • Carbohydrates: 20 gm
